Need some advice on using pigment in epoxy. Seem like each time I use some pigment in my epoxy it take a lot longer to cure (dry). Sometimes days to dry and remains sticky.
Any advise would be welcomed!!

Don't use pigment.
Rather, use dye powder which does not affect the drying time of the epoxy.

In typical gel pigment, there is a liquid that is used to keep the gel semi liquid. If that liquid is not compatible with the liquids used in epoxy, the cure time will grow exponentially.

Just as an experiment, you might try using powder paint that is used to paint lead head jigs. A huge variety of colors available in these paints and I expect that they would do a nice way to color epoxy without affecting the cure time of the epoxy.

I am Guessing that you are doing marbling right ? what I have done and do is I use powder jig paint mixed in to the epoxy and never has a issue with it curing and no problems with it not adhering to a properly prepped surface. it doesn't take much of the powder to color the epoxy and because it is dry it doesn't affect the chemical curing process of the epoxy.
try it play with it and you will get good results

You may want to consider the Jacquard Pearl-ex powders, too, if this is for marbling. They have a nice shine to them.
